You are correct… the only attributes that come up, I believe, are those that are added to the affected items as columns… give that a try, add it to the affected item tab and then see if you can get it to work.

I am not quite certain yet within the GUI advanced search one must group this type of search. Perhaps the WEB service query must also use the grouping ([]) to perform the search such that….
[“[Approver Action] Equal To ‘Awaiting Approval’ and [Approver] Contains ‘$USER’ and [Workflow Status] Equal To ‘$CURRENTSTATUS’”]

The answer is ‘No’. Best you can do, which I might add can be complex and is mostly NOT recommended, is to un-release the last change, make the correction and re-release. If you have connectors to say an ERP you would need to handle the update manually. Again, this is not a recommended approach yet is an option to solve your issue.
